Our Food

Our beautiful pigs have the ability to put down a decent amount of fat as they grow, which not only aids cooking but results in the flavour of the meat being "out of this world". I must say that I had never tasted real crackling until I roasted a joint from one of our own pigs.

Our rare breeds have developed over many years to suit our environment, they have the ability to forage for their food and be naturally hardly in the Scottish climate.

Traditional breeds are slow growing. They grow naturally, muscles take time to grow properly and the animal that grows naturally will produce well structured meat with a greatly superior texture. However, slower growing animals cost more to feed as they are around for longer.

When people see fat on a joint of meat or bacon from a traditional breed, they may feel that they are being cheated. It looks as though they are getting less meat for their money, compared to mega lean supermarket meat. If you stop to think about it, once you have got the supermarket meat home and cooked it, it can often result in a dry shrunken lump, due to the lack of natural fat. The other thing that you will have noticed, particularly with bacon, will be the watery mess in your pan, due to the water that has been forcibly added to the meat. Added water makes the packet heavier! There is nothing better than cooking real bacon, where the fat turns crispy and the meat doesn't shrink - just think how much you are losing as your "bacon" evaporates in front of your eyes!

There is also a personal reason that we keep rare breeds: we are proud to be part of maintaining the rare breeds survival. We also want to give the customer the best meat possible!
